Entry requirements

  • 2 Scottish Highers at grade C or above OR
  • 2 A Levels at grade D or above
  • Direct entry to year 2 may be possible with HNC Professional Cookery
  • Prospective students without the standard entry requirements are encouraged to apply and will be considered on an individual basis

Year 1 - HNC

Year 1 of the HND is HNC Professional Cookery.

Year 2 - HND

Mandatory units are:

  • Gastronomy
  • Kitchen planning and design
  • Management of food and beverage operations
  • Professional cookery: graded unit 2

Option units may include:

  • Fermented pastry products
  • Hospitality financial accounting
  • Hospitality industry 
  • Industrial experience in the hospitality industry
  • Integrated production cookery
  • Management of human resource in the hospitality industry

  • Patisserie

Additional costs

To participate in the practical kitchen activities, you will be required to purchase a College uniform at the start of term, which will cost approximately £150.

What can I do on completion of my course?

On completion of your course in professional cookery you might want to consider employment at supervisory level such as Sous Chef or as a Chef de Partie. With additional industry experience you could expect to find work as an Executive Chef or Head Chef or start up your own business.

Can I progress into further study?

You can progress to the BA (Hons) Hospitality Management.
