Have the experience of a lifetime, with interviews at our partners across Perthshire, including the world-renowned Gleneagles Hotel, and guaranteed placements in the local area. Enjoy a beautiful work setting in our rooftop restaurant looking across the city of Perth, and work alongside trainee chefs to create traditional and fusion Scottish recipes, fine dining menus, gastro-style burgers and a range of cuisines to offer the experience of local and international cultures. 

Work closely with our Professional Cookery course, plus local and international students, to create and run every element of the themed events held in the Brahan restaurant: working on everything from the props to the room design, engage with customers and support each other as a team throughout your course. In year 2, it's your turn! Choose your theme, plan your event and run your own night as general manager, with support from the rest of your group; with recent themes as varied as Phantom of the Opera, Disney, Field to Fork, Alice in Wonderland, and the Elements, there are incredible opportunities to unleash your creativity, while gathering all of the knowledge you'll need to be a success in the Hospitality industry.

Entry requirements

Entry to year one HNC:

  • 1 Scottish Higher at grade C or above OR
  • 1 A Level at grade D or above OR
  • SCQF Level 5 Food and Hospitality Studies, or Event Management OR
  • SCQF Level 6 Supervision and Leadership, or Professional Cookery; OR
  • Foundation Apprenticeship in Business Skills
  • All applicants will be expected to attend an interview in-person or online

Advanced entry:

  • Direct entry to year two of the degree may be possible with an HNC Hospitality Operations or HNC Professional Cookery
  • Direct entry to year three of the degree may be possible with an HND Hospitality Management or HND Professional Cookery with Management
  • Applicants with other relevant qualifications or experience will be considered on an individual basis

International students

  • All prospective students are required to participate in an information interview with UHI academic staff prior to making their visa application

  • Please note: International applicants requiring a Student Route Visa can only study Route A for year 4

SWAP Access courses

Year one of the course is either:

 

 

You will study the following core modules:

  • Business application of artificial intelligence
  • Food and beverage management
  • Management accounting
  • Marketing fundamentals
  • Skills for hospitality managers
  • Work placement: team working and communication

 

You will study the following core modules:

  • Corporate responsibility and sustainability in hospitality
  • Developing entrepreneurial effectiveness
  • Marketing communications
  • Quality management systems for hospitality businesses
  • Research skills 
  • Understanding visitor behaviour

There are two routes that can be taken in your final year, with the option to take a standard approach (route A*) or combine your final year study with work to complete an internship (route B**).

Route A*
You will study the following core modules:

  • Dissertation (SC)
  • Leadership in the global hospitality environment (S1)
  • Work placement: professional development (SC)
     

You will also choose two of the following option modules:

  • Corporate responsibility in the global environment (S2)
  • Emergent tourism trends (S2)
  • Major event analysis (S2)
  • Strategic marketing (S1)

Route B*
You will study the following core modules:

  • Dissertation
  • Internship: business development (SC)
  • Internship: professional development (SC)

 

*International applicants requiring a Student Route Visa will study Route A
**Route B is not eligible for Student Route Visa

  • S1: Semester 1
  • S2: Semester 2
  • SC: Semester continuous (studied across both semesters)

How will I study my course?

  • Full-time
  • Part-time (structured)
  • You will undertake this course: 
    • on-campus, in face-to-face lectures and tutorials
    • in our on-site restaurant in a controlled, simulated work environment
    • and online, via our virtual learning environment
  • You will also pursue industry-based work experience, via paid placements in partner organisations or your existing workplace

How long will my course last?

  • Full-time: 4 years @ 40 hours per week
  • Part-time (structured): 8 years @ 20 hours per week

Number of hours per week indicates the total number of hours you should dedicate to the course, which includes time spent in lectures and your own time spent on individual study and research.

Additional costs

You will be required to cover costs for restaurant and kitchen uniforms (approx £50-150). You will also be responsible for any additional costs incurred when travelling to and from work placements.
